It's named "creatureless creature" in the description box and it doesn't really do anything. It also seems to not follow you. It's the only pet I could find. There seems to be no way to unequip them, as well.

You unequip them the same way you would a cargo disc. Open your equipment window, right click and select unequip.
From that same list you can also "open" the pet's inventory and it will carry something for you.
We'll have to look into the name issue, as it should show as whatever type it is.
And it does follow, but at a bit of a distance. Or, at least it should.

I can still equip a disk and can't unequip the wolf. I can't get the little guy to move still. I don't have cloth effects enabled. Marsh was saying that might be something?
You can have a disk and a pet equipped at the same time. They go in different slots.
From your screenshot, it doesn't look like you have the latest build. Can you confirm for me that you did a full scan?
I will also check to be sure everything was patched out correctly to Blight.
I have not done a full scan, so I'll do that right now. Here's hoping that it's a problem on my end.
I did a full scan, and I have no new slot, and my wolf is nowhere to be found, as well.

Missed the cut off. The slot appeared. But it doesn't show anything equipped even when it is.
"Aniil's Pet" follows me around now and can be easily equipped/unequipped. Thank you so much.
Pets do indeed work great now , but I did notice that when I do an /sne it targets your pet , also when you have pet selected and cast heals gifts and what not it goes to you. BTW the pet is "rayed" highlighted but no name shows .
OK the old sig was too long , this one is better.
Pets are not meant to be healed, buffed, etc, so it's good that it goes to you, not your pet.
We'll have to look into the /sne issue.
When making food for the pet I noticed that in the item creation screen the formula name displayed as UNKNOWN. After speaking to the NPC and obtaining the pet the quantity 5 of the pet food remained in inventory. Is the food supposed to be consumed by the quest?

No the food is for you to keep. Right now it has no effect, but in the future as pets are something we develop more, we'll figure out what it can do.
