Do this:
1. Install java, but disable all browser functionality in the java settings (control panel), if your are worried about security holes.
2. Make a shortcut from the file launcer2.jar in you game directory - that's the latest version (2.6)
I get nothing but connection error messages when trying to use the .exe files, but this method works for me at least. Should also keep your system safe.

Regarding Java security, the attack vector to be concerned about affects the browser plugins (IE's activex and Firefox's netscape plugin api), not the entirety of Java.
If you're just getting around to installing Java, the latest version is 1.7 update 11, which STILL has the vulnerabilities mentioned in [this thread]. Make sure you do the following:
- During installation (and all subsequent upgrades), keep an eye out for a screen that installs a browser toolbar. Uncheck the box that tells the installer to include this extra junk that has nothing to do with Java.
- Disable the browser plugins. [See here for more info.]
- Don't rely on the Java control panel security level settings to protect you against web-based attacks. Apparently these can be bypassed.

This is sorta off topic but the Mac Beta (Mac Istaria) still has the old launcher so when running a mac I can not get into game.
Is this going to be changed / updated?
