I think one truth holds across all servers: dragons are the largest demographic group. However, a dragon charater shuts you out of all biped classes and into the three dragon classes (dragon adventurer, dragon crafter, dragon lairshaper).
Due to multiclassing, and the ease of switching between classes you have acquired, it is quite difficult to say which biped class is the most popular. I suppose the 'safe bet' classes people know from other games are on the more popular end of scale: warriors, mages, clerics, healers, paladins. Then the proven strong or useful prestige classes like berserker, reaver, spiritist and wizard. What people probably avoid are the low-damage, bad-reputation or incomplete classes like monk and disciple types, archer types, conjurer. But this is just my impression.
