in the option window, under the keybinding tab, toggle interface is the last one. There's no associated key by default, so you'll have to set one ; I use F11 since F12 is the screenshot key

I have mine set up as a hotkey to toggle ui off, screenshot and toggle on. Works pretty well. Having a key set up to toggle it is still a good idea tho. I hit a major lag spike once and didnt get my ui back..
